Vinification Details The selected areas of the best blocks were harvested at optimum ripeness and yeast fermented in open tanks at 33 degrees C.  This was accompanied by regular plunging and pumping over with 2 weeks skin contact after fermentation.

Duration in Wood  12 months with no racking
When Bottled   July with no fining and coarse filtration prior to bottling

Winemaker's Comments  This 100% Cabernet Sauvignon is a blend of 3 different clones from different vineyards. The aim is to create a complex but classic Cabernet which will compliment robust red meat dishes.
