Man O'War Merlot/Cab Blend
2011 was a relatively cool and late vintage resulting in wines of elegance and nesse. The fruit for this wine is all estate grown, hand harvested and delivered to the winery in impeccable condition. In the winery the fruit was subjected to rigorous sorting before and after destemming. Due to the cooler vintage the decision was made not to crush so the fruit was tipped into the vats as whole berries for the fermentation. Approximately 18 separate batches make up this wine, many undergoing a wild fermentation while some were inoculated with selected
yeast strains. Each batch was plunged by hand twice daily during fermentation but also with gentle pump over’s during the cold
soak and after the ferment while the wine rested in contact with the skins before pressing. Un-inoculated malolactic fermentation takes place in barrel before blending and bottling in the following new year.
Man O’ War Bordeaux blend exhibits ripe aromatic notes of dark berry fruits, cocoa and liquorice with complementary oral, spice and co ee characters. The palate is rich and supple with exuberant sweet fruit balanced with fresh natural acidity and ne grained tannins. The fermentation of whole berries in the ferment has promoted the fruitfulness of the vintage and the gentle extraction has resulted in a ne tannin structure. Made of the 5 traditional varieties of Bordeaux; Cabernet franc, Merlot, Cabernet Sauvignon, Malbec and Petit Verdot. acidity. This wine is bottled and protected under screw cap as we believe it is the best closure for quality wine.
BLEND: 44% Merlot, 27% Cabernet Franc, 11% Malbec, 10% Cabernet Sauvignon, 8% Petit Verdot
