Alazani Valley White


Variety:                                      Rkatsiteli - 90%, Mtsvane – 10%

Region:                                      Grapes are sourced out: 50% from Kondoli vineyards, 50% from North East of Kakheti region

Viticulture:                               Grapes are hand-picked at the optimum of their maturity at the end of Septembe , beginning of October.

Vinification:                              Softly de-stemmed grapes are cooled down to 4-6 degrees C, macerated on the skins for 8 hours and then gently pressed in the pneumatic press. Later the settled and free run clear juice starts fermenting slowly at precisely controlled temperature (15-18 degrees C) in stainless steel tanks.   When the fermenting juice reaches optimum sugar/acidity balance, fermentation is stopped by cooling, in order to retain the natural sweetness and freshness of the wine. Wine is usually bottled a few months after the vintage.

Tasting profile:                         Bright golden color. Intense and elegant fruity aromas dominated by apple and melon. Refined and medium-bodied, lingering zesty and slightly sweet finish.

Food pairing:                            Traditional dishes of chicken and vegetables.
