Vinification Details Hand picked; then part of the harvest goes through the soft pressing, followed by a cold pre-fermentation (soaking) for 72hrs. The fermentation begins slowly, during which time temperature rises to 30-32°C max. We begin with the rundown, then punching and pumping daily. The fermentation of the wine runs between 28 and 30 days.

Winemaker’s Comments Intense dusky red colour. Red fruit flavour, such as huckleberry and blackberry. Light and elegant with vanilla aroma. Spicy yet smooth tannin texture. The final tone is menthol-flavoured. This wine is ideal roasted beef with morels or a shoulder of lamb cooked with five spices, as well as any other meaty dishes.
