Vinification Details                            Handpicked grapes. After a light pressing the juice settles for 36 hours at a temperature between 10°C to 12°C.  The wine is barrelled at the beginning of the fermentation process. Afterwards, the wine ages for twelve months on its sediments, protected from the air in our air-conditioned barrel cellar.

Winemaker’s Comments                   This Côteaux du Languedoc reveals notes of lemon, mango, and pineapple. The nose expresses a beautiful acidity. The wine has vanilla flavours and the after taste leaves a wonderful freshness. Le Colombier is ideal with crustaceans, white meats and creamy risottos.
