Vineyards 

Grapes were selected from 36 hectares (90 acres) of hillside vineyards in some of the best viticultural areas of Marano, planted in limestone based soils at 300 m (985 ft) elevation with south-east exposure.

Vinification Details
Clusters were rigorously graded hand-picked. Natural and traditional drying of the grapes for 20 days. Extreme care exercised to maintain clean, healthy grapes. In October, cool controlled temperature fermentation at 22 degrees C, followed by a 15 day maceration on the skins in large oak barrels.
Winemaker's Comments 

Color:      Deep garnet-red colour

Aroma:    Spicy bouquet with intense, multilayered aromas of ripe cherry and almond
Flavor:    Full, rich flavors in the mouth with a long finish

Food Pairing 
Pairs well with Risotto, roasted red meats, and small game. It can be great with fillet in pastry, grilled beef or lamb.
